The Pantry Station
Since teaming up in the early 1970s, Bill McCormick and Doug Schmick have established more than 50 restaurants and catering operations throughout the country. The history of McCormick & Schmick's Seafood Restaurants began when Bill McCormick purchased Jake's Famous Crawfish Restaurant located in Portland, Ore., and brought the more than 100-year-old landmark back to life. The two formed a partnership in 1974, creating Traditional Concepts, a precursor to today's McCormick & Schmick's Seafood Restaurants. In 1979, they opened the original McCormick & Schmick's Seafood Restaurant in Portland, Ore. Since that time, the company has expanded to more than 50 restaurants across the country.
Summary of Internship
As an intern at McCormick and Schmick's I worked at the pantry station. The pantry station has two parts; the hot and cold parts. I was restricted to work in the cold part of station because of the safety issues involved in the hot part. At the cold part of the station I prepared all types of salads, oyster entrees, and various desserts. By working along side Chef Karen I learned how to prepare large entrees quickly and efficiently. I learned how to be fast and manage my time. It was a great experience and I acquired some of the skills necessary to becoming a chef and pursuing a culinary career.
